Ingredients

Balsamic fig and apple chutney

  • 350 g red onion, peeled and halved
  • 1 tablespoon extra virgin olive oil
  • 420 g Red apple, unpeeled and quartered
  • 550 g Figs, 2cm diced
  • 300 g raw sugar
  • 225 g balsamic vinegar
  • 150 g apple cider vinegar
  • 2 teaspoon mixed spice

Recipe's preparation

    Balsamic fig and apple chutney
  1. Peel and halve onions, add to Thermomix bowl then chop 3 seconds/speed 5.
    Add oil and saute 4 min/120 degrees/speed 1.
  2. Meanwhile, core and quarter apples and dice figs.

    Add apples to bowl and chop 3 seconds/speed 5.
  3. Add figs, sugar, balsamic, apple cider vinegar and mixed spice and cook, 45 minutes/Varoma/Speed 2 with simmering basket in place of MC.
  4. Sterilise jam jars ready for filling. This recipe will be make about 8 x 150ml jars (1.2L total).
  5. After 45 minutes check consistency. Your chutney should be fairly thick and chunky.

Tip

If jars are correctly sterilised, chutney should keep at room temperature in a dark pantry for 6 months. Refrigerate after opening.

    Made this today, easy and it's a good consistency. Modified it a little according to what I had versus what I didn't have. I reduced the sugar to 200 gm.
    Then did a second batch, half red onion and half red apples. ( no figs left) Keen to try once it's matured a bit.

    I made it today and reduced raw sugar to 200gms. I did have 50gms more of very ripe figs and it turned out really nice and thick. So tasty.

    I made this relish today. Modified with the addition of chilli flakes . It is delicious and pairs well with a cheese platter. Delicious!

    OMG this is the BEST chutney I've ever made. Because I didn't have the ingredients I used green apples and half ACV and white vinegar.

    Great recipe. Chutney is delicious. Going to try it with sugar substitutes next.
    May need to cook longer than 45min as mine is not as thick as the picture indicates. Great as a spreadable in a pot.
