- 2 sweet corn cobs
- 300 g zucchini
- 4 eggs
- 125 g Milk
- 250 g self-raising flour
- 2 tsp Vegetable stock paste
- 1/2 tsp Ground Coriander
- 1/2 tsp cumin seeds

- Place 500g water into Thermomix mixing bowl. Cut corn cobs into thirds and place into simmering basket. Cook, 10 min/100°C/speed 1 or until corn is lightly steamed.
- Meanwhile, gather your remaining ingredients and prepare any sides.
- Once corn is cooked, remove simmering basket and set aside to cool slightly, or refresh under cold water if necessary. Drain water. Then, place 300g zucchini into Thermomix® bowl and chop 3 sec/speed 5 or until nicely grated.
- Remove corn from cobs using a sharp knife, and add to bowl with zucchini.
- Add 4 eggs, 125g milk, 250g self raising flour, 2 tsp vegetable stock paste, 1/2 tsp ground coriander, 1/2 tsp cumin seeds and mix 10 sec/"Counter-clockwise operation" /speed 4. If needed, scrape down sides and mix 3 sec/"Counter-clockwise operation" /speed 4.
- Pre-heat a skillet or pan (I use an open sandwich press) and cook fritters in batches until golden brown and cooked through.

Tip
As a main meal, serve with your choice of protein and a salsa of finely chopped tomatoes, cucumber, pineapple, avocado and coriander leaves.
As a breakfast, serve with a dollop of natural yoghurt.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
