Fudgy gluten free chocolate cake
- 100 g dark chocolate
- 420 g red kidney beans, drained
- 5 eggs
- 1 tbsp vanilla extract
- 125 g Butter
- 180 g raw sugar
- 70 g cacao powder, raw
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt

- Preheat your oven to 180 degrees. Grease and line a 20cm cake tin.
- Add 100g dark chocolate to Thermomix bowl and chop 10 sec/speed 9.
- Melt chocolate 2 min/50°C/speed 1.
- Add drained kidney beans, only 1 egg and 1 tbsp vanilla extract and mix 15 sec/speed 4. Transfer to a bowl and set aside.
- Without washing the Thermomix bowl, add 125g butter and 180g raw sugar and mix 30 sec/speed 4 or until pale.
- With Thermomix running for 30 sec/speed 4, add the remaining 4 eggs, one at a time, through the hole in the mixing bowl lid. Once time has run out, scrape down sides and continue.
- Return chocolate and bean mixture to the Thermomix bowl, along with 70g cacao powder, 1 tsp baking powder, 1/2 tsp bicarbonate soda and 1/4 tsp salt and mix 15 sec/speed 4 until combined. If necessary, scrape down the sides and combine a further 3 seconds.
- Pour mixture into prepared pan and bake for 35-40 minutes. Allow to cool in the tin.
Tip
Serve with whipped cream or ice cream and fresh berries.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
