Salmon poke bowl
- 4-5 stalk Kale
- 10 g sesame oil
- 1-2 carrots
- 4-6 fresh salmon fillet
- 300-350 g Sushi Rice

- Roughly chop 4-5 stalks of kale (removing tough stems) and place into Thermomix bowl. Add 10g sesame oil and mix 5 minutes/"Counter-clockwise operation" /Speed 3 to massage the kale. Set aside until ready to serve.
- If you would like to use your Thermomix to make grated carrot, peel and add carrot (cut into thirds) to Thermomix bowl and chop 3 seconds/Speed 5, then set aside. Otherwise, use a manual shredder or grater.
- Next, prepare salmon and rice for cooking. Measure 1100g water into Thermomix bowl. Place simmering basket into bowl and add 300-350g of sushi rice. Rinse well before returning to Thermomix bowl.
- Place 4-6 salmon fillets into Varoma dish and tray and position Varoma on top of the rice. Season with salt if you choose.
- Cook 18 minutes/Varoma/Speed 3 or until salmon is cooked through. If salmon is very undercooked at the end of the first 18 minutes, remove simmering basket with rice to avoid overcooking.
- Meanwhile, prepare the rest of your ingrediets. To make pickled cabbage, slice cabbage finely and place into a jar or sealable container with 2 tablespoons of apple cider vinegar. Shake vigerously a few times to soften cabbage slightly.
- Halve avocados, remove the stones and slice inside the skin. Set aside until ready to serve.
- Once rice and salmon are cooked, assemble your poke bowl. Arrange rice, salmon, kale, carrot and cabbage in a bowl and top with sliced avocado (scoop out with a spoon). Drizzle with soy sauce and a dollop of mayonnaise. Sprinkle with your choice of chilli flakes, dulse flakes or sesame seeds, and serve with nori sheets on the side.
