Ingredients

Kale and Zucchini Soup

  • 6-8 leaves kale leaves, large with hard stem removed chopped roughly
  • 1 level tbsp olive oil
  • 1 clove garlic, optional
  • 4 --- spring onions
  • 1 --- zucchini, approx. 300gm chopped
  • 1/2- 1 level tsp chilli, dried, optional
  • 1 level tbsp Vegetable stock paste
  • 1/2 litres water, Just enough to cover the veg
  • 1 pieces Fresh Tumeric, 3 cm optional can use 1/2 tsp dried
  • pepper

Recipe's preparation

    Soup
  1. Place garlic, fresh tumeric and sping onions in bowl
    Chop 5 sec speed 7
  2. Add oil, chopped kale and chilli and sautee 5 mins 120 degrees speed 2 (100 degrees in TM31 or 21)
    Add zucchini pieces and chop 8 seconds speed 7 (or until roughly chopped)
  3. Add stock and enough water to cover the vegetable mix (approx 500ml) add pepper to taste. Cook 20mins 100 degrees speed 2
  4. Leaving measuring cup in place, slowly turn speed selector from speed 5 to speed 10 and puree for 10-40 seconds depending on how much texture you like in a soup.

Tip

Use a cup or two of spinach leaves if you don't like Kale. This is a delicious really nutritious lunch or snack
