Ingredients
Broccoli and Corn nuggets
- 3 slices wholemeal or wholegrain bread (or 120g breadcrumbs), roughly torn
- 150 g Cheddar or Tasty cheese, cut into cubes
- 700 g water
- 300 g broccoli florets
- 60 g brown onion, peeled and sliced in half
- 1 garlic clove, peeled
- 20 g olive oil
- 50 g baby spinach leaves (or other greens, such as silverbeet or kale)
- 50 g fresh or frozen corn kernels
- 2 eggs
- 50g wholemeal spelt flour (or wholemeal flour)
- 1 tbsp chia seeds

- Preheat oven to 180°C. Line two baking trays with baking paper or a reusable silicone sheet. Set aside. Or if using an air-fryer, skip this step.
- Place 3 slices of bread and 150g cheese into mixing bowl and chop 8 sec/speed 8. Set aside.
- Place 700g water into mixing bowl. Place Varoma into position and add 300g broccoli florets. Secure Varoma lid and steam 15 min/Varoma/speed 2 or until broccoli is tender. Time may vary based on size of florets. Set Varoma aside.
- Discard water.
- Place 1/2 onion and 1 garlic clove into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl. Add 20g olive oil and saute 2 min/100°C/speed 1.
- Add reserved broccoli and spinach and chop 10 sec/speed 4.
- Add breadcrumb and cheese mixture, 50g corn, 2 eggs, 50g flour, and 1 Tbsp chia seeds and mix 20 sec/Reverse/speed 4.
- Refrigerate or freeze 15-30 mins or until completely cooled (can skip this step if time-poor, does not affect end result).
- Scoop or roll tablespoons of mixture into balls, flatten slightly and place on trays if baking. Bake 25 mins or until golden brown and cooked through, flipping nuggets halfway through cooking.
Or if using air fryer, set air fryer to 180°C and cook (in batches if necessary) for 10-15 mins, flipping halfway.

White flour can be used instead of wholemeal/wholegrain flour.
If you prefer, you can pan- or shallow-fry the broccoli and corn nuggets until they are golden brown and cooked through.
