Ingredients
Bourbon BBQ Sauce
- 1 Small brown onion, Cut into quarters
- 5 cloves garlic
- 20 g olive oil
- 100 g Bourbon (good quality)
- 75 g tomato paste
- 600 g Tomato ketchup
- 85 g brown sugar
- 70 g apple cider vinegar
- 65 g Worcestershire sauce
- 1/2 level tsp salt
- 1/2 level tsp black pepper
- 1/4 level tsp cayenne pepper
- 4-8 dashes Hot Sauce, (Optional, if you like it hot)

- 1. Place peeled and quartered onion and garlic cloves into bowl, chop 3 seconds speed 7.
2. Scrape down sides. Add oil, cook 2 1/2 mins, 100 deg, "Counter-clockwise operation" speed 1. MC on
3. Add Bourbon, cook 2 mins, 100 deg, "Counter-clockwise operation" speed 1. MC on
4. Add remaining ingredients and cook for 12 mins, 100 deg, "Gentle stir setting" gentle stir, steaming basket or splash guard on.
5. let cool slightly and blend with MC on, 10 seconds, speed 7.
6. Pour into a sterilised jar and store for up to 4 weeks.
Note: I find my sauce lasts longer than the recommended time, but go off sight, smell and taste.

Tip
I use this sauce on smoked Chicken Wings and is a great addition to a Bacon and Egg Burger.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
