- 150 grams Dark cooking chocolate, broken into pieces
- 75 grams pure whipping cream

1. Place chocolate pieces into bowl"Closed lid" and grate, 10sec/speed10
2. Scrape down bowl and lid with spatula.
3. Add cream and heat for 2mins/50℃/speed3
4. Leave cream in bowl for approximately 5 mins to cool and start to thicken. Use as required.

Tip
Tip: this ganache is firm setting, perfect for icing cakes or cupcakes, or using for making truffles.
To make truffles pour ganache into a bowl and place in the fridge, once firm scoop out spoonfuls and roll into a ball, then roll in your choice of garnish, eg: cocoa powder/chopped nuts/coconut

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I made this for a birthday cake and it worked well...quite rich but then you would expect that! It set well and was easy to make - good recipe.
Increased the quantity to 400grams chocolate and 200grams cream. Just the right firmness and perfect for large cake
Haven't made it yet. But could I spread it in my layered cake and then freeze. Or make in advance and pop in the freezer ready for assembly. Am organising a baby shower and I know I will end up being pushed for time. Thanks in advance.
