Ingredients
Crumble mix
- 50 grams Butter, cubed into 1cm pieces, softened
- 150 grams plain flour
- 1/2 teaspoon baking powder
- 1 pinch salt
- 75 grams caster sugar
- 1 small egg
Cake Batter
- 130 grams vegetable oil, (3/4 cup)
- 2 eggs
- 1 tbsp lemon rind, finely grated with a microplane
- 250 grams natural yoghurt
- 300 grams caster sugar
- 350 grams Self Raising Flour, (2 cups)

1. Place flour, baking powder and salt into mixing bowl and mix 10 seconds/speed 4 to combine.
2. add sugar, egg, 50g butter and mix 10 seconds/speed 6. Scrape down sides of bowl with spatula and repeat mixing 10 seconds/speed 6.
3. Place crumble mixture into a separate bowl and set aside for later.
1. Preheat oven to 180°c fan forced.
2. Line a springform round baking tin with baking paper and grease the sides.
3. Add oil, eggs, rind, lemon juice, yoghurt and sugar into the mixing bowl and mix 10 seconds/speed 5. Scrape down sides of bowl and mix again 10 seconds/speed 5.
4. Add the flour to the mixing bowl and mix 10 seconds/speed 4 to combine. Scrape down sides and mix again 5 seconds/speed 4.
5. Pour batter into the springform tin and sprinkle the crumble mixture over the top
6. Bake for 50-60 minutes in the oven, checking to make sure a skewer comes out clean.
7. Allow cake to cool for a few minutes then remove sides of tin and place on a cooling rack

Tip
You can add flavourings to the crumble mixture - eg cinnamon, flavoured sugar (I used a rose flavoured sugar sprinkled on top)
Serve with a custard made using the auto setting on the TM5

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I can only see lemon rind in the ingredients list and no lemon juice, however, in the instructions it says to add lemon juice. How much please?
