- orange peel from 1 orange
- 80 grams dried cranberries
- 5 sprigs rosemary
- 600 grams chilled cream

Place peeled orange rind into Thermomix Bowl. Chop 10 seconds / speed 10. Scrape down sides of bowl and chop for a further 10 seconds / speed 10. Add the cranberries and rosemary and chop 10 seconds / speed 10. Remove mixture and set aside. The mixture should be nice and fine.
Insert butterfly into mixing bowl and add chilled cream. Whip for 1 to 3 minutes / speed 4, until the butter separates from the liquid. You will know when this step is complete, as you will hear a change in the sound, and your Thermomix will start to "rock'n'roll" a little bit.
Pour out the liquid (buttermilk), using the basket as a strainer. Return the solids to the bowl with the chilled water. Mix 3 seconds / speed 4. Pour out the liquids, once again using the basket as a strainer. This step can be repeated multiple times if desired. Clean and dry mixing bowl.
Place butter solids along with cranberry mixture in mixing bowl with butterfly and whip 5 seconds / speed 4.
For a beautiful roast turkey, spread this butter between the skin and meat all over using a spoon. Rub any leftover butter into the outside of the skin. This will not only infuse a beautiful flavour into your turkey, but also make the skin lovely and crisp.

Tip
This butter would make a lovely gift, packaged up in a jar with instructions on how to baste the turkey.
Can be frozen if required, or stored in an airtight container for approximately 2 weeks. The "cleaner" the butter, the longer it will keep for. The cleaning step (adding chilled water) can be repeated a number of times.
The by product of butter is buttermilk. This can be retained and used in a number of different application. Buttermilk scones are my favourite! Buttermilk is able to be frozen until required.

Oh no, I'm sorry... I have updated the ingredients list to include the chilled water. The chilled water is to "wash" the buttermilk out of the butter. The more you wash it, the cleaner it becomes. The reason for doing this is basically for shelf life, and is the reason that butter has a longer shelf life than cream or milk. If frozen until you plan on using it, I'm sure it will be perfectly fine. Good luck, and I hope you love it!
Have you missed a rather important ingredient, chilled water? I've just made it without that (I misread the instructoins, I guess because I wasn't expecting chilled water to be called for), just added the solids back in by themselves and continued the step to run the machine 3 secs, strain and repeated a couple of times (never adding water)... Will my butter be ok if frozen until the day before use? Or should I start again?
