- 8 sprigs Dill
- 1 lemon rind only
- 600 grams chilled cream
- 500 grams chilled water
- 1 teaspoon Himalayan salt

Place peeled lemon rind into Thermomix Bowl. Chop 10 seconds / speed 10. Add the dill and chop 3 seconds / speed 6. Remove lemon zest and dill mixture and set aside.
Insert butterfly into mixing bowl and add cream. Whip 1 to 3 minutes / speed 4, until the butter separates from the liquid. You will know when this step is complete, as you will hear a change in the sound, and your Thermomix will start to "rock'n'roll" a little bit.
Pour out the liquid (buttermilk), using the basket as a strainer. Return the solids to the bowl with the chilled water. Mix 3 seconds / speed 4. Pour out the liquids, once again using the basket as a strainer. This step can be repeated multiple times if desired. Clean and dry mixing bowl and remove butterfly.
Place butter solids along with lemon zest, dill and salt in mixing bowl and blend 5 seconds / speed 6.
Place butter onto sheet of baking paper and roll into a log. Place in fridge to firm up.
This butter tastes lovely served on top of fish.
Tip
This butter is absolutely beautiful served on top of fish, as the butter melts and leaves behind the chopped dill, thus creating an instant sauce.
Can be frozen if required, or stored in an airtight container for approximately 2 weeks. The "cleaner" the butter, the longer it will keep for. The cleaning step (adding chilled water) can be repeated a number of times.
The by product of butter is buttermilk. This can be retained and used in a number of different application. Buttermilk scones are my favourite! Buttermilk is able to be frozen until required.
