Ingredients

Green Tomato Pickles

  • 500 g Green Tomatoes, washed and quartered
  • 650 g brown onions, peeled and quartered
  • 1 tsp salt
  • 195 g red capsicum, chopped
  • 20 g red chilli
  • 300 g zucchini, peeled, de-seeded and chopped
  • 150 g water
  • 300 g white malt vinegar
  • 1/4 tsp ground allspice
  • 4 --- cayene pepper, shakes
  • 1 tbsp mustard powder
  • 220 g raw sugar
  • 1 tsp tumeric
  • 1/4 tsp curry powder
  • 4-5 tbsp cornflour, (depending on desired consistency)

Recipe's preparation

  1. 1. Place tomatoes in TM and chop for 8 sec on speed 4 using spatula - transfer to a large bowl or Thermoserver.

    2. Place onions in TM and chop 8 sec on speed 4 using spatula - add to the green tomatoes and combine.

    3. Spinkle salt over tomato and onion and leave covered overnight.

    4. Place red capsicum, red chilli and zucchini in TM and chop for 8 sec on speed 4 using spatula.  

    5. Add tomato and onion mixture to TM.  Add vinegar and water.

    6. Cook 13min, 100deg.  Reverse + speed 2. 

    7. Add all remaining ingredients except cornflour.  Cook 20mins, 90degs.  Reverse + speed 2.

    8. Add cornflour and mix 2min, reverse + speed 3. NB. Make a paste of the cornflour and a bit of water if you are worried about getting lumps.

    8. Bottle, seal and label.

Tip

Great in toasties, sandwiches or wherever you like chutney or pickles.

    Nice tasting pickles. I drained off some of the juice and cooked a little longer as I added some more green tomatoes to use up my stash! Thanks 😊

    Cooked in TM31
    I cut the quantities back as this is the second time I have cooked it, and it was too much for my machine. Didn't add the water but mixed it with the cornflour at the end. Lovely pickles to serve with corn meat.

    Lovely taste. I doubled the cayene pepper and left out the chilli. I also cooked for an extra 20 minutes with the basket on instead of the MC. Wasn't sure if I was supposed to drain the liquid out of the tomato onion mixture, so drained off half. Made just over 2 litres. Yummo
