- 180 g sunflower seeds
- 160 g lemon juice
- 3/4 tspwhole black peppercorns (optional)
- 3 cloves garlic, (or less, to taste)
- 1 3/4 tsp sea salt

Pre-soak the pine nuts and sunflower seeds overnight (or for a few hours) in water with a squeeze of lemon juice.
Place all ingredients in Thermomix and
turn dial to speed 8, using spatula to push it down into the
blades while mixing. Takes about 1 to 1 1/2 minutes to mix until smooth. You may need to add a little water so it blends more
easily if you haven't soaked the seeds. Blend until you get a super
smooth texture.I use this as a dip with crackers or vege sticks, as a substitute for sour cream, as a sandwich spread, or even as a cheese replacement for a pizza topping - just spread it on a cooked base and top with raw chopped veges, olives, etc. (See photo)
Tip
If you haven't remembered to soak the seeds & pine nuts, you can still make this - just add a little water until it reaches the texture you like. But it's better if you do soak them, as it makes it easier to digest.

Hi
is there an alternate for the nuts? I am dairy free for my daughter (breastfeeding) but I am intolerant to nuts. Would love to be able to have some sort of cheese.

I do a cream cheese recipe using cashews. I use this base for cream cheese frosting on cupcakes and savoury dips 😊

Yes, you can just use blanched almonds instead of pine nuts! That's the variation I generally do now - have a look on my website at the updated cream cheese recipe I also make a lot of different dairy free pizza toppings, and will be posting my recipe for cheese free pizza scrolls soon - they're yummy!!

I've just realised my newborn doesnt agree with dairy (via my breastmilk), so I'm looking for dairy free recipes etc. Stumbled across your recipe, which sounds great - as I was wondering how I would get toppings to stick to pizzas etc (going to REALLY miss that cheesey taste for awhile!). I'm also allergic to pine nuts, so just wondering if you have any suggestions of what I could replace the pine nuts with... if anything? Cheers, Nic
