Ingredients
Bacon and onion stuffing
- 2 brown onions, cut into halves
- 2 garlic cloves
- 300 g bacon, rind removed
- 40 g Ghee, (see Tips)
- 1 tablespoon fresh sage leaves
- 150 g day old zucchini and pepita muffins, (or other grain free bread)
Orange and cardamom spice rub
- 1 tablespoon cardamom pods
- 1 teaspoon black peppercorns
- 1 teaspoon allspice
- 1 teaspoon salt
- 1 orange, zest only, no white pith
- 2 cm piece of fresh ginger
Turkey ingredients
- 1 Turkey, 4 kg (see Tips)
- 100 g Ghee, (see Tips)
- 2 brown onions, cut into halves
- 1 leek, white part only, cut into pieces (5 cm)
- 2 carrots, cut into pieces (5 cm)
- 1 stalk Celery, trimmed and cut into pieces (5 cm)
- 3 sprigs Thyme
- 3 bay leaves
- 1000 g water
Gravy
- 500 g stock, from roasting dish
- onions and leeks, from roasting dish
- 2 tablespoon Gelatine powder, (see Tips)
- salt, to taste
- pepper, to taste

- Place onions and garlic into mixing bowl and chop 2 sec/speed 5.
- Add bacon and chop 4 sec/speed 4. Scrape down sides of mixing bowl with spatula.
- Add ghee and cook 5 min/100°C/"Counter-clockwise operation" /speed 1.
- Add sage and crumbled muffins and chop 5 sec/"Counter-clockwise operation" /speed 4.
- Transfer into a bowl and place into refrigerator to chill.
- Place cardamom pods, peppercorns, allspice and salt into mixing bowl and mill 1 min/speed 10. Scrape down sides of mixing bowl with spatula.
- Add orange zest and mill 30 sec/speed 10.
- Add ginger and chop 10 sec/speed 9.
- Transfer into a bowl and set aside. Clean and dry mixing bowl.
- Preheat oven to 210°C. Wipe room temperature turkey (see Tips), inside and out with paper kitchen towels, then rub all over with spice rub or salt and pepper.
- Place ghee into mixing bowl and melt 2 min/50°C/speed 1, or until melted.
- Place stuffing inside turkey, pressing it in firmly.
- Place onions, leeks, carots, celery, thyme and bay leaves into a large roasting dish, spreading over base of dish.
- Pour water into dish, then place turkey breast side down on top of vegetables and drizzle whole bird with melted ghee.
- Tent with foil, fixing tightly to hold in steam
- Place into oven and roast for 45 minutes (210°C). Clean and dry mixing bowl.
- Turn oven down to 170°C and roast for another 2 hours.
- Remove foil, baste turkey with juices from dish and roast for another 30 minutes (170°C) or longer if you have a larger turkey. Baste every 10-15 minutes. To check if Turkey is done, pierce thigh with a skewer, the juices should run clear.
- Once done, remove turkey from oven, cover with foil and allow to rest for 20-30 minutes.
- Place reserved onions and leeks from roasting pan, 500 g stock and gelatine into mixing bowl and blend 20 sec/speed 9, or until smooth.
- Cook 5 mins/Varoma/speed 2.
- Season to taste then serve with turkey and stuffing.

Tip
40 g ghee can be substituted with 40 g olive oil in the Bacon and onion stuffing.
100 g can be substituted with 100 g duck fat in the turkey.
2 tablespoons gelatine powder can be substituted with 2 tablespoons cornflour in the gravy. Gravy made with gelatine will be thinner than gravy made with cornflour.
Thaw frozen turkey for 2 days in the refrigerator.
Bacon and onion stuffing can be made the day before to ensure it is chilled in time.
Before cooking turkey, remove from refrigerator and let it sit for up to an hour until room temperature.
Any day old bread can be used for the stuffing. Other options include my Paleo Bread (grain free - pg 155 Quirky Cooking), Spelt Challah (cookbook - spelt flour, egg free) or Chia Buckwheat and Quinoa Bread (recipe community - gluten free, egg free).
If cooking roasted vegetables, place them in the oven when you remove the foil from the turkey so that they have an hour cook.
