- 1 tablespoon cummin seeds
- 1 tablespoon coriander seeds Whole
- 1 teaspoon chilli flakes, dried
- 1 tablespoon olive oil
- 1 brown onion, peeled and cut in half
- 1 Red capsicum, medium, de seeded and cut in quarters
- 1 green capsicum, medium, de seeded and cut in quarters
- 1 can Diced Tomatoes (400g)
- 1 pinch sugar
- salt and pepper for seasoning

place cummin and coriander seeds into set timer for 5 mins, varoma temp
blend for 1 minute speed 10
add chilli flakes
add onion & capsicum chop speed 4 for 10 seconds
add olive oil
cook varoma temp, for ten minutes
add tomatoes & Sugar
set timer for 8 mins, 100*
adjust seasoning with salt and pepper
Tip
if you like garlic, add one or two cloves at the chopping onion stage
if you prefer milder, lessen the chilli, hotter, increase the chilli
is nice with cheddar cheese melted through as a dip with corn chips
is nice with chicken baked in the oven
is nice on cornchips for Nachos

I had an abundance of fresh tomatoes, so made it with them and it was perfect 👌
This was lovely. Just wondering how long it will last in the fridge? Also can it be freezed?

This is the best salsa!! I sometimes add fresh coriande. Even my picky eater (who doesn't like tomato) loves this one!!!
I've made this dip several times and it's aways a big hit. About to make it for an album launch tomorrow night in a double batch. We have Mexican Mondays in our house and I add beans to it for protein which is a nice variation on the theme too.
