Recipe's preparation

  1. Melt butter 2-3 min, 60', speed 1 and set aside. No need to wash bowl.

  2. Place rest of ingredients in the bowl along with the butterfly. Cook 7 min, 90'(**), speed 3-4. After about 30s of cooking time, slowly start pouring the melted butter onto the lid so it trickles down through the MC gap.

    **this produces a very thick hollandaise. For a slightly thinner sauce, cook on 80'.

Tip

I used Apple Cider vinegar, but any other vinegar or lemon juice should work just as well.

    Thank you for the awesome recipe!

    First time making hollandaise and this recipe made it so simple. Used 2 teaspoon of lemon juice, cooked it for the full 7 minutes at 80° for a perfect consistency sauce. 5 ⭐

    I made the half batch in the TM6 and adjusted temp to 80deg and cooked 6 min. I found that the sauce cooked onto the bottom of the bowl so wasn't able to fully scrape out all the sauce. First time making H sauce. Still delicious but also found it was cold by the time I'd poached the eggs (despite putting into a preheated thermo server).
    Did taste delicious and we had more than enough sauce for 2 people.

    How to fix split hollandaiseHow to fix split hollandaise

    IF YOUR SAUCE SPLIT follow this trick, it worked a treat for me.

    Pretty much add roughly 1/2 tsp of boiled water to a heat proof bowl, drizzle in the split sauce whilst continuously whisking thoroughly. When you see it starting to go bad again, add another bit of boiled water and continue until all done.

    Fantastic recipe, thank you! I added about 8 tsp of lemon juice and I loved the extra zingy ness.

    I've made this many times but this morning forgot to set the melted butter aside and just threw the egg yolks and lemon juice in on top of the melted butter. It worked exactly the same. Perfect. Oh and I always halve the recipe and just do for 6 mins
