Ingredients
Chutney
- 500 grams Cooking Apples ie. Granny smith
- 1 medium brown onion
- zest of 1 lemon
- 2 cm piece of fresh ginger peeled
- 100 grams raisins
- 120 grams Rapadura Sugar, or raw sugar
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
- 2 tablespoons tumeric
- ground black pepper, to taste
- 100 grams flavoured balsamic vinegar, e.g. lime and ginger
- 125 grams white vinegar
- 125 grams verjuice

Mince ginger and lemon zest speed 8, 3 secs
Add onion (halved) and chop speed 5, 3 secs
Add apples (peeled, cored and quartered) and chop speed 4, 4 secs or until texture of your choice
Add all remaining ingredients and cook 35 mins, 100, speed 2 "Counter-clockwise operation"
Spoon into hot sterilised jars.
