I love it! I like to add a tablespoon of Aoli before I mix and then toss with a small bag of rocket/spinach. Yumm-o.
I bake quite a bit but I’m not so confident with salads. This one is really delicious! After reading the comments, I also threw in some sultanas.
Can leave out the onion as it is a relatively strong flavour.
Tasty! I used sesame oil as I’d run out of EVOO. I also cut the carrots into about 3 or 4 rings. I’ve heard that whole carrots can blunt the blades. Will definitely make again.

Amazing!! A quick, easy and delicious salad.
A really great salad that uses fridge and pantry staples. As long as I have a bag of carrots and apples I’m set! I sometimes skip the parsley, sometimes use chives instead. Sometimes use almonds instead of cashews. Also works well with white wine vinegar. Yep, I make this salad a lot!!! Thanks for sharing this recipe with us!
