Ingredients

  • 500 g kumera or sweet potato, peeled, quartered.
  • 1 brown onion, peeled, quartered
  • 3 eggs
  • 1/2 teaspoon salt
  • pepper, to taste
  • 100 g Coconut Flour, or wheat flour
  • 30 g Chedder cheese, pre-grated in TMX

Recipe's preparation

  1. Place all ingredients except bacon in TM bowl and mix for 30 secs on speed 5, with the aid of the spatula. Dont mix for much longer as sweet potato will mush up.

    Heat a mixture of 3-4 cm rostis in flavourless oil and ghee in a pan till hot, and fry 2-3 tbs of rosti mixture for 3-4 mins each side, till brown, crispy and cooked in the middle.

    Rosti should be soft in the centre, so I finish them off in the oven to ensure they are cooked through.

    Serve while hot with Ketchup or tomato relish. 

Tip

If you mixture is too wet, add a little extra flour. It should resemble a chunky fritter mixture, with some moisture. If your mix is too dry the rosti will be very stodgy.

    I had a look at the 'potato bacon and sage rosti' recipe and adapted this to my liking.

     

    I put a total of 100g cheese in. (30g Parmesan 70g cheddar) I put 1/4 bunch coriander in aswel. I uses plain flour.

     

    Turned out well. Good consistency. 

     

    I tend to like my rostis a bit chunkier. Might grate the potato next time.

    These were quite dry and had an overwhelming coconut taste with the recommended 100g of coconut flour. They didn't taste like sweet potato at all!

    I think that the coconut flour could be reduced significantly - maybe by half or more ( you would possibly have to decrease the number of eggs if you try this) and that the texture and flavour of these would be better. It also mentions bacon in the recipe but does not have it in the ingredients list....
