700g Butternut Squash,peeled and diced into 1cm cubes

  • 1 tablespoon grated ginger
  • 1 medium onion, peeled and quartered
  • 1 Carrot Diced
  • 2 apples, peeled & cut into 2cm pieces
  • 1 tablespoon curry powder
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 20 g OilveOil

  • 700 g chicken stock

Recipe's preparation

    Butternut Squash soup with Ginger and Curry
  1. Add onion to TM bowl chop 5s speed 5

  2. add oil sautėe Varoma, 2m, speed 1

  3. add Apple,carrot, salt, pepper, curry 

     sautée Varoma, 2m, spped 1

  4. add squash, stock and honey 

    cook Varoma 23m, spped 1 cover with basket to avoid hot splatter

  5. Cover with MC and hold with towel. 

    Purėe 30s speed 5 then 30s speed 8

  6. serve immediately 

Tip

Cover with basket during cooking

use MC cover and hold with towel during purėe process

serve in bowls, garnish with cream or yogurt and a squeeze of lemon

    Made this recipe for my mother and myself. She loved it, although I found it a bit sweet. I think I may leave out the honey next time for less sweetness but I absolutely loved all the flavours together. I added the ginger in step three.
    I will definitely make it again. Thanks for sharing.

    The BEST soup I have made up to now and this is about the 30th different one I have tried from the recipe community. It's so full of flavour and it made 4 decent sized portions so I'm looking forward to having it again tomorrow.

    As previous comments have mentioned Ginger has been missed from the recipe, I realised at step 4 so just added it then.

    Very surprised there's not more positive comments on this.

    When do you put the ginger in?  You appear to have forgotten this ingredient in the prep?

    Noted the grated ginger in ingredients were not in the method! Something minor though.
