Ingredients
Cauli/Broc Soup
- 1/2 brown onion
- 2 clove garlic
- 20 grams peanut oil
- 400 grams Broccoli inc stalks
- 400 grams Cauliflower incl stalks
- 200 grams Celery
- 1 tablespoon Vege Stock Concentrate
- 600 grams Water/Chicken Stock
- 30 grams Butter
- 1 Potato (very small), Peeled, thickening agent instead of flour
- pinch Nutmeg, To taste
- cheese, Shaved, to taste

Place onion and garlic into TM Bowl and chop for 4 seconds on speed 6, then scrape down the sides of the bowl.
Add Peanut Oil and sautee for 3 minutes at Varoma Temp, speed 1.
Add cauliflower, brocolli, celery and stock concentrate to the bowl and turbo once or twice to break it down a little and all fit in the bowl, add the water/chicken stock and cook for 15 minutes at 100 degrees on speed 1.
Add potato, butter and cook for a further 5 minutes at 100 degrees on speed 1.
Blend for 1 minute slowly climbing from speed 1 to speed 8. I tend to up the speed every 5 seconds. For safety reasons I lay a teatowel loosely over thermie with the MC in place, as more of a precaution than anything else.
Take the lid off, season it a little, stir it to the bottom, replace the lid and repeat the above step.
Sprinkle with Nutmeg & cheese shavings, season to taste and serve!!
Tip
This can be dairy/lactose free by substituting the butter for Peanut Oil and omitting the cheese, nut-free by substituting for a different oil to peanut. It freezes well in chinese containers for portion convenience

Is the celery supposed to go in at the same time as the broccoli and cauliflower?
