Ingredients

Soup

  • 1 tablespoon olive oil
  • 2 tablespoons Butter
  • 1 brown onion, cut in half
  • 2 Small Potatoes, peeled and cut in quaters
  • 1 large pear, peeled, cored, and cut in quaters
  • 1 head Cauliflower, cut into florets
  • 5 leaves Fresh Sage
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon homemade stock paste
  • 1 litre water
  • 2 tablespoons chopped roasted walnuts, for serving

Recipe's preparation

  1. Place the onion into the TM bowl and chop for 3 seconds on speed 7.

  2. Scrape down the sides of the bowl and add oil and butter.  Sauté on Varoma for 3 minutes on speed 1.

  3. Add potatoes, pear, cauliflower, sage and thyme, and chop on speed 7 for 10-15 seconds, or until finely chopped.  You may need to loosen the vegies with the spatula to facilitate even chopping.

  4. Add water and stock paste, and cook at 100 degrees for 20 minutes.

  5. Puree the soup starting at speed 1, then gradually increasing to speed 9 for 1-2 minutes.

  6. Adjust seasoning to taste and serve with a sprinkle of chopped roasted walnuts and a drizzle of olive oil.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
