Ingredients
- 1 onion, peeled and quartered
- 2 bacon rashers
- 600 gram water
- 2 tablespoon TM stock concentrate
- 800 gram cauliflower florets
- 1 tsp curry pwdr
- salt, to taste
- Nutmeg, to taste (optional)
- 20 grams parmesan grated
- 100 grams cream cheese

Chop onion and bacon, 2 seconds speed 6. Scrape down sides of bowl.
Saute 4 minutes, 100 degrees, speed 1, MC off.
Add water, cauliflower, stock and curry powder and cook 20minutes, 100 degrees, speed 1.Add cream cheese.
Blend 40 seconds going slolwy from speed 1 to speed 8.Taste, add salt if needed + nutmeg.Blend further 20 seconds speed 8.Serve with a light sprinkle of nutmeg.
Tip
Lovely served with toasted Turkish bread spread with home-made pesto.

In-cred-able!! This is the best cauliflower soup I have ever made (and I am nearly 60!) I thank you Kerryin Oz. I only did one thing differently - a personal taste - I don't like wizzed up bacon. So I sliced up the bacon and put it in the varoma, where it could steam and all the flavour drip back into the soup. Wizzed it up as per instructions and stirred in the bacon. A soup like velvet, with smokey bacon slivers. I would not be ashamed to serve this in the best restaurant in town.

really tasy soup. i think i may have added too much curry but it was still yummy!
Enjoyed it very much. Don't be fooled by the cauliflower step. I thought surely you needed to cook the cauliflower first, but I stuck to the recipe and it turned out beautifully.
