Ingredients

Creamy Celery, Potato and Leek Soup

  • 5 celery stalks, roughly chopped
  • 1 leek, roughly chopped
  • 200 grams potato, roughly chopped
  • 25 grams Butter
  • 1 dried bay leaf
  • 600 grams water
  • 1 tbsp chicken stock paste, (I used skinnymixers)
  • 300 grams full cream milk
  • Salt & Pepper, to taste

Recipe's preparation

    Creamy Celery, Potato and Leek Soup
  1. Place all vegetables and butter into Closed lid"Closed lid" , insert measuring cup and chop 5sec, speed 5. Scrape down, then cook for 3mins, 100deg, speed 1, no measuring cup.
  2. Add bay leaf, water and chicken stock paste to Closed lid"Closed lid" , insert measuring cup and cook for 20mins, 100deg, speed 1.
  3. Once cooked, ensure measuring cup is still in place and blend for 1 min, speed 5 (gradually increasing up to speed 9).
  4. Add milk, salt and pepper to Closed lid"Closed lid" , insert measuring cup and mix for 15sec, speed 5. Serve immediately with soft bread rolls.

Tip

Garnish with chopped celery leaf if desired

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    I really loved this recipe. I added a piece of cauliflower that needed using up. I didn’t have any leeks so I substituted the leek for an onion.
    I also reduce the amount of milk to 150g then added 150g of cream.
    So delicious and will become one of my favourites in future.

    Really enjoyed this, thank you for posting it helsbels16.
    Followed the recipe, with the only change being I topped up 200g Hi-Lo milk with 100g whipping cream (as I didn't have full fat milk on hand), we love a standard potato and leek soup and the celery added a new taste again.
    Have saved to my favourites to cook again. 👍🏻
