- 400 g butternut pumpkin
- 350 g parsnip diced
- 900 g water
- 100-150 g cream, Optional

1) chop onion speed 6 3-4 seconds
2) add oil. Sauté 100 degs speed 2, 2 mins
3) add stock, cumin, coriander and curry powder 100 degs, speed 2 2 mins.
4) add veg chop speed 6 5-10 seconds
5) add water cook 100 degs, 20 mins speed 2.
6) blend gradually from speed 1-9 over 90 seconds.
7) add cream and salt pepper to season further 5 mins speed 3 90 degs.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This pumpkin and parsnip soup worked well. I used a few strips of bacon instead of the onion at the start
I tried this recipe today and was pleased with it. Lovely mild curry with a little sweetness from the parsnips. I added some coriander to the mix, which I loved. Thanks for your recipe. "Closed lid"
