Ingredients

Meatballs (polpette)

  • 300 gram beef mince (or chicken)
  • 25-30 gram romano cheese, finely grated
  • 25-30 gram breadcrumbs
  • bunch sprig Parsely, to taste
  • 1/2 teaspoon Garlic Salt
  • 1 egg

Soup

  • 1/2 onion
  • 1 clove garlic
  • 2 cubes carrot, sliced into circles or cubes
  • 1 stick Celery, to your taste
  • 20 g olive oil
  • 1 litres chicken stock, (or TMX version added to equiv. water)
  • 500 g water
  • 1 heaped teaspoon TMX Veg stock
  • 90-100 grams risoni, (or other small pasta)

Recipe's preparation

    Meatballs
  1. Place all ingredients for the meatballs (polpette) into the TMX and mix 3mins reverse speed soft Gentle stir setting"Gentle stir setting" , (if it needs more mixing, increase speed to 1 or 2, remembering to make sure it is on the Counter-clockwise operation"Counter-clockwise operation" reverse setting). You can also use chicken (I mince a chicken breast first)

  2. Roll into little balls (approx 5cent piece or 10cent piece in size)Cover and refridgerate for 30mins

  3. SOUP
  4. Place onion, parsley & garlic in the TMX bowl. Secure lid and measuring cup. Blitz for 4 seconds on speed 6.

  5. Add carrots & celeryAdd 20g olive oil. Saute 3mins on VAROMA speed 1.

  6. Add 1 litres of chicken stock Add 500g water plus the teaspoon of TMX vegetable stockCook for 5mins varoma, Counter-clockwise operation"Counter-clockwise operation" reverse speed soft.

  7. Add meatballs and salt and pepper to taste, cook for 5mins, 100 degrees reverse Counter-clockwise operation"Counter-clockwise operation" speed soft Gentle stir setting"Gentle stir setting" . USE THE SIMMERING BASKET TO COVER THE LID of the TMX.(cook for longer if needed - ensure meat is cooked through. For this reason small meatballs, consistent sized meatballs are best).

  8. Add 100g risoni. Cook for 10mins 100 degrees Counter-clockwise operation"Counter-clockwise operation" reverse speed, Gentle stir setting"Gentle stir setting" soft.

  9. Pour into thermoserve and as an option, stir through some spinach leaves roughly chopped.Serve with parmesan sprinkled on top and crusty bread.

  10. ****WARNING! This soup will be extremely HOT!****When removing the lid, use an oven mit or thick tea towel and turn the lid away from your face. Allow to cool slightly before transferring to the Thermoserver.

Tip

You could add different veggies like celery for example. You could also try  steaming the meatballs in the varoma while the risoni cooks but I have not tried this.Also, today I was too lazy to chop the carrots and celery, instead, after dicing the onion, parsley and garlic, I threw in the carrots & celery roughly chopped, 4 secs speed 6, OR if you like to actually see little bits of veggies in there, chop at speed 4, 6 seconds then saute'd....     Glad I gave this a go. It was delicious and worth the 5 star rating for that. My 6 & 9 year old boys really liked it and ate the carrots and zucchini (substituted celery) as well as the meatballs and soup! I used 500 g of mince (adjusting quantities of meatball ingredients in proportion), reduced the volume of liquid so I wouldn’t overfill the TMX and left out the risoni.

    This soup was okay, I felt as though it lacked in flavour, I did the first half in the thermo and transferred to the stove top as the Thermomix should NEVER  be covered while cooking. 

    You should consider adjusting your recipe to not include covering your thermomix with anything.

    I made this but without meatballs and was yummy! It needed salt and a few chicken stock cubes, I also added a can of chopped tomatoes. Will make it again. thanks.
