Ingredients
Soup
- 1 brown onion, peeled and halved
- 2 centimetre fresh ginger, peeled
- 1 long red chilli, havled and de-seeded (keep seeds if you like it hot)
- 60 grams olive oil
- 1000 grams pumpkin, peeled and cubed
- 400 grams coconut cream
- 1 tablespoons TM veg stock

Preheat oven to 200c
Place pumpkin in roasting pan and drizzle with 40g olive oil then bake for 30 minutes
Place onion, ginger and chilli in TM bowl and cop 3 sec/speed 7
Add 20g olive oil and cook 3 min/Varoma/speed 1
Add roast pumpkin when cooked, coconut cream and TM Veg stock then cook for 8 min/100c/speed 1
Blend 1 min/speed 9 aking dial up to speed 9 slowly
Tip
This makes a very thick and filling soup. To serve more simply add enough water to reach just under the 2L mark on the bowl before blending.

Delicious! I added a few cloves of garlic with the onion, 1/2 tsp Tumeric, 1/2 tsp cumin powder and a splash of lime juice at the end to cut through the creamy coconut
