Ingredients
- 2 cloves garlic, peeled
- 1 leek, pale section only, halved lengthways, thinly sliced
- 30 grams olive oil
- 1 or 2 potatoes, peeled and cubed
- 1000 grams filtered water
- 1 1/2 tablespoons TM vegetable stock concentrate
- 550 grams broccoli, approximately 2 heads, cut into florets, halve or quarter larger ones, then peel and chop stem to make up weight if necessary
- 15 grams fresh basil leaves, approx. 1/4 cup
- 10 grams fresh parsley leaves, approx. 1/4 cup
- 75 grams Sour Cream (optional)

Chop garlic cloves on speed 7 / 3 seconds
Scrape down sides of bowl and add leek and oil.
Saute with MC off 100C / 3 mins / speed 1
Add potato, water and stock. Cook 10 minutes / 100 C / speed 1
Add broccoli. Don't exceed the max line! Cook for 5 minutes / 100 C / speed 1
Add parsley and basil. Puree for 2 minutes / speed 9.
Stir through sour cream on serving.
Tip
If you'd like the soup to be a thicker consitency then sit the simmering basket on the lid instead of the MC during cooking.
It's the fresh parsley and basil that really set this broccoli soup apart from the rest. I hope you enjoy it as much as we do

I have just made this Broccoli Soup and it tastes beautiful. I hate broccoli but I know it's good for you so I usually make Broccoli Tots. Now I have this soup, I will be making it more often. Instead of using olive oil, I tried Azalea Cuisine Asian inspired cooking oil flavoured with ginger, garlic, sesame oil and peanut oil. I added a good grinding of black pepper a teaspoon of salt and chicken stock paste. Happy with the thickness and how creamy it is without cream added.

Both easy to make and healthy, this delicious soup is addictive. My tasting spoon is guilty of double dipping, triple dipping and more.... yummo!!!
Just made this - and it tastes AMAZING! Used 800gm of water as per the comments and didn't bother with the sour cream. So delicious!
Did not try original recipe due to lack of ingredients and noticing people mention theirs was runny. I made enough for three bowls. 1 whole large brocolli head, 20g olive oil, half a large onion instead of leek, same herbs but dry so I added a table spoon of each and 700 grams of water. That was all I changed and followed the rest of the recipe without cream . Perfect for lunch today thankyou Garnsey!

I only used 800g water and it was plenty.
I also omitted the sour cream and added 30g greek yoghurt and it was perfect.
Excellent broccoli and leek soup. Lowered oil to 10ml and left out sour cream in order to reduce calories. Have alreday made multiple times.
Yum - didn't have parsley - used 750ml water and added bok Choy - even better !
