Ingredients
Makes approximately 1 litre
- 1/2 brown onion
- 2 cloves garlic
- 3 cm ginger
- 1/2 teaspoon Crushed chilli (jar), Or 1/2 red chilli deseeded
- 20 grams Butter
- 20 grams vegetable oil
- 270 can light coconut milk (or full coconut milk)
- 800 grams Ripe tomatoes, halved
- 200 grams chicken or vegetable stock
- 1/2 teaspoon raw sugar (optional)
- 2 tablespoons tomato paste
- salt and pepper to taste
Garnish with
- --- fresh coriander or basil leaves

Add onion, garlic cloves, ginger and chilli to bowl.
3 secs speed 7 with MC in place. Open lid and scrape down edges.
Add butter and oil. Saute for 2 mins, heat 100 speed 1 with MC in place.
Add tomatoes, tomato paste, stock and sugar.
30 secs speed 7 with MC in place.
Varoma 20 mins speed 1 with steamer basket in place of MC to allow reduction and reduce splatter.
30 secs speed 8 with MC in place.
Add coconut milk.
5 secs speed 8.
salt/pepper to taste
Tip
Try adding a 3 cm stick of lemongrass with garlic, onion and ginger.
Take out sugar if too sweet or you require a sugar free dish.

I've added curry powder a couple of times as well now! Thanks for the idea
This was yum. I accidentally put the coconut milk in with everything else so I'm not sure how this affected the end result. It was still good though and will make it again for sure.
So much flavour and so quick and easy to make. Also have made it with a teaspoon of curry powder for a bit extra zing, yum !!
