Ingredients

  • 2 Skinless chicken breast fillets, about 150g in size
  • 1.5 litre chicken stock
  • 2 stalk lemongrass, crushed
  • 2 star anise
  • 1 tbsp coriander seeds
  • 5 cm ginger, sliced
  • 2 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 juice 1 lime
  • salt and pepper to taste
  • 175 g Pad Thai Rice Noodles, soaked
  • 4 stalk spring onions, sliced on diagonal
  • 1 red chilli
  • 1 handful beansprouts
  • 1 Handful coriander leaves, roughly chopped
  • 1/2 cm cup fried shallots
  • 12 mini Roma tomatoes, sliced
  • 4 Mushrooms sliced

Recipe's preparation

  1. Place chicken in varoma tray set aside

    In bowl pour in chicken stock, lemon grass, star anise, coriander seeds and ginger.

    Place varoma in place and cook on Varoma, 15mins, Reverse speed 2

    Strain stock, discarding spices. Add fish sauce, sugar and lime juice and season to taste with salt and ground black pepper. Then cook for 5 minutes 100 degrees speed 2 (just to get it up to temperature)

    Meanwhile slice chicken thinly. Divide noodles between 4 bowls top with slices of chicken, the spring onions,, crisp shallots, chilli, beansprout, mushrooms and tomatoes. Pour over the hot broth then sprinkle with coriander to serve.

    Thanks for posting this wonderful recipe. My family loved the taste, even my 7 and 6 year old kids said that I was allowed to make it again (big compliment! ). Will definitely make again!

    Delicious ... my chicken took longer to cook but otherwise I followed the recipe exactly and it was yum!

    When I made this I actually halved all the ingridients as It was only myself for lunch, Think i ate too much though as it was that good!
