Ingredients

Soup

  • 2 tablespoons olive oil
  • 1 tablespoon Butter
  • 1 onion, halved
  • 900 grams zucchini, trimmed, roughly chopped
  • 1 teaspoon Oregano, dried
  • 0.6 litre vegetable stock, or chicken stock
  • 115 grams Gorgonzola dolce cheese, rind removed, roughly chopped
  • 0.3 litre Pouring Cream
  • salt and black pepper to taste
  • fresh oregano and Gorgonzola dolce to garnish

Recipe's preparation

  1. 1. Chop cheese for 2 sec on speed 6. Set aside. Clean bowl.

    2. Add onion, butter and oil and sautee for 3 minutes Varoma speed 

    3. Add oregano and zucchini and chop 5 seconds on speed 6, then add stock and

    4. Cook for 14 minutes 100 degrees, speed 1-2.

    5. Add Gorgonzola dolce and cook gently for 5-7 minutes 90 degrees speed 2 on reverse speed or until cheese is melted.

    6. Process soup for 1 minute, speed 5 - gradually increase speed to 9.

    7. Add two thirds of the cream and blend for 10 seconds speed 6.

    Optional: add more cream and adjust the consistency to your liking.

    Season with salt and pepper and garnish with some oregano.

    I had fun with this recipe, as I had to use what I had, in the house.

    Huge marrow gifted by my neighbours out of their garden, fresh oregano out of my garden, cheedar cheese (well I had it, and it is my favourite cheese), full cream un-homogenized milk, oil that I had been soaking chillies in for over 12 months. Home made frozen beef stock.  Served it with home made (Thermomix basic recipe) bread where instead of 100gms of wheat flakes, I used deb instant potatoes and again the oil that had been infused by chillies.

    Was a wholesome meal for four guys, so thank you for the inspiration! tmrc_emoticons.)
