Ingredients
Dim Sim Filling
- 320 g chicken breast, diced
- 200 g cabbage, roughly chopped
- 2 shallots, roughly chopped
- 2 tsp Concentrated vegetable stock, (EDC cookbook) or 1 tsp chicken stock powder
- dash sesame oil
- dash fish sauce
- 1 tsp soy sauce or tamari
- 1 egg
- salt and pepper to taste
- 1 package wonton wrappers, Or make your own
Wonton Wrapper
- 250 g unbleached bread flour
- 1 large egg
- 1 teaspoon salt
- 120 g ice water
- Cornstarch (real corn cornflour)

Place chicken pieces into TM bowl. Put on Closed Lid setting and pulse using Turbo button for a couple of seconds. Add cabbage and shallots, egg, stock, sauces and seasoning. Pulse briefly several times till mix is minced.
Place a teaspoon of the mix in a wonton wrapper and fold the sides up around the meat while twisting around in your hand to form an open cupcake.
Place wontons in Varoma tray. Place at least 1 litre of water in the TM bowl, place Varoma unit on top. Set to Varoma temperature, speed 2 for 35 mins.
Wontons can be placed on baking paper on the Varoma tray.
Serve with a dipping sauce made with soy sauce and sweet chilli sauce.1.
Wonton Wrappers

(This recipe is for 24 pieces - I should have put more mixture in each as I made 24 and still had more Dim Sim mixture left over)
1. Put egg, salt and 60 g water into TX bowl. Mix speed 4 for 2 sec.Add flour to bowl. Mix speed 5 and add as much of the remaining water as required to make a thick but sticky batter.Lock lid set at interval for 2 minutes. Leave covered and let rest for at least 30 minutes up to 60 minutes.Set to interval for 2 min. Turn out onto corn floured board or Thermomat. Form a ball then cut in half. Roll each half into a cylinder. Lightly score so that you have 12 equal pieces. Roll each piece out into a 9cm (3 1/2-inch) square. Keep pieces covered so they do not dry out. You can use a pasta machine for this.Stack the wrappers while you are preparing the remainder, covering with a damp cloth so that they don't dry out. If necessary, lightly dust the wrappers with cornflour or cornstarch to prevent them from sticking together. Wheat flour gets absorbed and they do stick. Use immediately, or refrigerate or freeze in a plastic bag until ready to use.
The amount of water can vary depending on the flour you use.
DO NOT use wheat flour to keep them seperate.
