Dynamite Shrimps PF Chang
- 30 pieces prawn, raw, king, Tail Removed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper, black, ground
- 130 grams flour, all-purpose
- 50 grams potato starch
- 2 pieces egg
- 10 tablespoons mayonnaise
- 3 tablespoons red chilli hot sauce
- 3 tablespoons Tomato ketchup
- 1/4 teaspoon paprika, hot
- 10 grams honey, liquid
- 1 garlic cloves
- 1/4 teaspoons sesame oil
- 1 teaspoons white vinegar
- 80 grams water, mineral

- Make sure the prawns are properly dried so that the batter will stick to the prawn.
- For the Batter:
Place the butterfly on the Thermie and Put the salt, pepper, flour and potato starch in the Thermomix and mix speed 1 "Counter-clockwise operation" for 10 seconds.
Break the egg inside and continue mixing for 1 min speed 1"Counter-clockwise operation" .
Add 80ml Water, if is too thick add a bit more.
Add the shrimps and mix speed 1 reverse "Counter-clockwise operation" for 1 minute.
Save in a bowl.
Heat oil in a large pot and fry the shrimp for about 1-2 minutes. To make sure the oil is at right temperature, first test it by adding a bit of the batter to the oil. If it sizzles, it means the oil is at the right temperature. Fry only 2 or 3 shrimp at a time in order to maintain the temperature of the oil.
Drain the shrimps on kitchen paper. - For the Sauce:
Put Mayo, Ketchup, vinegar, sesame oil, garlic clove minced and Hot Sauce in the Thermomix and mix speed 1 for 10 seconds.
Add the honey and mix for 10 seconds more, reverse "Counter-clockwise operation" 10 seconds.
In a medium-sized bowl, combine the sauce ingredients and then add the fried shrimp to coat with the sauce, add sliced green onion on top.
Serve immediately.

The original dish is served in a cocktail glass on a bed of cabbage leaves.
