Ingredients

  • 12 large green king prawns
  • 1/2 handful sage
  • 1/2 handful oregano
  • 1/2 handful coriander
  • 1 small knob ginger, peeled
  • 1 clove garlic
  • 2 dried long red chillies
  • 1 lemon, zest peeled without white pith
  • 125g extra virgin olive oil
  • sea salt
  • Freshly ground black pepper
  • parsley, to serve

Recipe's preparation

  1. Split king prawns in half and remove the intestinal tract.  Set aside in refrigerator until ready to marinate.

  2. Preheat oven to 250 degrees C.

  3. Place peeled lemon zest in mixing bowl and grate 20 secs/speed 7.  Scrape down sides of bowl.

  4. Add sage, oregano, coriander, ginger, garlic and chillies to mixing bowl and chop 3 secs/speed 7.

  5. Add olive oil, salt and pepper and mix 5 secs/speed 5.  Smear marinade on the cut side of the prawns and place on a baking tray, marinade side up.

  6. Cook them in the pre-heated oven for about 5 minutes.

  7. Serve with a squeeze of lemon juice, salt and pepper and serve with a lemon wedge and parsley.

Tip

Prawns can be cooked on a pre-heated BBQ or charcoal kettle  BBQ.  Cook by pressing the prawns down to caramelise the flesh.

You can ask your fishmonger to prepare the prawns for you to reduce your preparation time to 5 minutes.
