Ingredients

200gms onion,

  • 200 grams onion
  • 200 grams Mushrooms
  • 200 grams Tempeh
  • 2 cloves Garlic.
  • 100 grams dry sherry
  • 100 grams brandy
  • 1 egg
  • 150 grams cream
  • 20 grams flat parsley
  • 20 grams Mixed fresh herbs (of your choice)
  • dash salt and pepper to taste
  • 50 grams tonta yeast nutritional yeast, or parmesan cheese
  • 500 grams roasted nuts, walnuts,cashew,almond,or mixed
  • dash cayenne pepper, optional
  • dash Nutmeg, optional
  • dash lemon juice, optional
  • 50 grams alfalfa sprouts

Recipe's preparation

    method
  1. Place 300 grams of roasted nuts of your choice into mixing bowl and blitz 10 sec/speed 9 and set aside

    Place garlic and onion in mixing bowl and blitz 3 sec /speed 6

    Add chopped mushrooms and cubed tempeh to mixing bowl and blitz 3sec/speed 5

    Add butter and saute 5minutes/veroma/speed 1

    Add remainder of ingredients to mixing bowland blitz 10sec/speed 6

    Pour mixture into well greased small moulds or terrines [approx 4]

    Refridgerate and serve cold with crackers or toast

    This mix can be frozen and thawed as needed

     

Tip

I used 300grams of nuts and it worked well

    Yum! This pate was amazing. I used white wine and red wine vinegar as I didn't have any brandy or sherry. So good, I'll definitely be making this again.

    I can't believe this pate is vegetarian, what a great allternative... yum!

    This pate can be made without the yeast/ Parmesan  cheese and still tastes fab.
