- 12 medjool dates, pitted
- 110 grams apple puree*
- 50 grams pumpkin puree**
- 25 grams milk***
- 0.5 teaspoon vanilla extract
- 60 grams Coconut Flour
- 0.5 teaspoon cinnamon
- 2 tablespoons chocolate chips, optional

1. Place dates, apple and pumpkin puree, milk and vanilla in bowl. Puree for 20 seconds, speed 10. Scrape down and repeat until mixture is smooth.
2. Add remaining ingredients and mix 20 seconds, speed 4 or until a dough like consistency is achieved. If too wet add more coconut flour and if too dry add more milk.
3. Roll into 24 small balls, incorporating the chocolate chips at this stage if using.
Store in the fridge or freezer.
*Can also use apple sauce
**Can also use leftover pumpkin soup
***Can also use almond milk for a dairy free option
If the dates are a bit hard try softening in warm water first to help enable a smooth puree consistency.
Depending on how much time you have you can either make the pumpkin and apple purees in the thermomix first or buy ready made.
