Ingredients
- 250 g mixed cheeses of choice, cubed, Hard cheese grated; 3sec/spd 9
- 1 Large carrot, Washed well, cut into thirds
- 1 large zucchini, Washed well, cut into thirds
- 0.25 bunch Kale, Washed well, ripped in half
- 1 Corn on cob, Kernels cut off con
- 20 g olive oil
- 1 tablespoon sweet paprika, ground
- 250 g Dried pasta shapes (eg: macaroni)
- 1 egg

1. Grate hard cheese 3 sec/spd 9; set aside
2. Rinse mixing bowl, cook pasta as per EDC book; set aside
3. Add carrot, zucchini and kale and chop 3sec/spd5
Scrape bowl down.
Preheat oven to 180 deg C
4. Add corn kernels, olive oil and paprika to mixing bowl. 2 min/100 deg//spd 1
5. Add cheese (keep a bit of grated cheese to top muffins), pasta and egg
5 min/ 40 deg//spd 1
Cheese should be melted and all ingredients coated
6. Spoon mixture into muffin papers (12 child sized muffins). Bake in oven for 15-20 minutes or until top is brown and crispy.
Tip
I used what ever cheese I have on hand. Ricotta and feta work well but can leave the muffins too wet. I tend to do half soft cheese and half hard cheese. You can also add a small can of tuna or salmon to the mix.
These freeze well once cooled. They are handy to have ready to go for those out and about days with your toddler.

My toddler wasn't overly impressed, but maybe a little salt will help next time. Will try again.
My little girl loved these, thanks for a yummy recipe.
These are fab! I onlu had long pasta shapes which I thought might burn in the oven cause they stuck out of the mixture in their trays but I just cooked slowly and they worked a treat. I also threw in some hemp seeds for extra baby goodness!
Do you have to cook the pasta for this recipe before you start? or does it cook enough in the oven?
