Ingredients

  • 5 brown onions, Peeled and halved
  • 2 cloves garlic, Peeled
  • 6 leaves Sage
  • 25 g TM butter
  • 25 g olive oil
  • 25 g brown sugar
  • 60 g plain flour
  • 750 g water
  • 40 g TM vegetable stock concentrate
  • 125 g white wine
  • 20 g brandy

Recipe's preparation

  1. Add onions and garlic to mixing bowl; 3 sec/spd 7


    Be careful not to over process the onions.  The soup is more rustic than the mandolin cut onion soup in restaurants but tastes just as good! 

  2. Add butter and olive oil to mixing bowl; 5min/ 100 deg/spd 1

  3. Add brown sugar; 7min/100 deg/spd 1 


    or until the onions have turned caramel in colour

  4. Add plain flour; 10sec/counter-clockwise operation/spd 4

  5. Add water, TM stock concentrate, wine, bay leaf and sage leaves; 60min/100 deg/counter-clockwise operation/spd 2 MC on

  6. If using add brandy (or cognac); 2 min/100 deg/counter-clockwise operation/spd 2

Tip

Serve with fresh bread or croutons with melted cheese.  Freezes well ready for quick and easy meals.

    Thanks.  If you have any left it freezes/thaws really well.  I bought a few paper coffee cups, line them with freezer bags, pour the soup in, pop the lid on, freeze, then tie the bag up and slip them out of the cup.  Then when I need a quick meal or lunch for work, I just take the soup block out, rip the bag off and microwave ithe soup in a bowl.  The good thing about doing them in the cup is that they stack well after freezing and you can reuse the cup next time.

    Wow - that was just amazing! So delicious. Will be going on the favourites list for sure! Great for the cold rainy weather we're having here today.

    This is my first recipe tmrc_emoticons.) I forgot to put that it is quite a thick and flavoursome version of the classic.  You can add more water towards the end of cooking to thin it out.  I couldn't work out how to modify the recipe once I posted it so I thought I'd put it here in the comments.
