Ingredients
Dough
- 220 grams lukewarm water
- 375 grams baker flour
- 1 sachet instant yeast
- 1 teaspoon salt
- 1 tablespoon olive oil
Pesto
- 50 grams Parmesan cheese
- 2 cloves garlic
- 50 grams pine nuts
- 50 grams Roasted unsalted cashews
- 1 bunch fresh basil, stalks removed
- 80 grams olive oil
- salt, to taste
Pizza Sauce
- 2 cloves garlic
- 100 grams red capsicum
- 40 grams olive oil
- 400 gram tin diced tomatoes
- 300 grams Passata
- 1 teaspoon dried onion powder
- 1 teaspoon dried oregano
- 30 grams tomato paste
- 1 tablespoon stock paste (EDC)
Filling
- 200 grams diced chorizo
- 100 grams Diced bacon
- 250 grams sliced mushrooms
- 100 grams Grated Tasty Cheese
- 200 grams grated Mozzarella cheese
- 1 egg, for brushing

1. Add the ingredients in this order: water, olive oil, yeast, flour, salt.
2. Blend on speed 7 for 10 seconds to combine.
3. Knead on "Dough mode" for 6 minutes.
4. Place ball of dough in a lightly oiled bowl and cover with cling wrap. Place it in a warm spot for at least 1 hour.
5. Roll out dough on your ThermoMat or baking paper, ensuring the length is no longer than your baking tray
1. Place parmesan and garlic into "Closed lid" and grate on speed 8 for 15 seconds.
2. Add pine nuts, cashews and basil leaves, then blend on speed 7 for 10 seconds. Use your spatula to scrape down the bowl then blend on speed 7 for an additional 5 seconds until smooth.
3. Add olive oil and combine on speed 4 for 45 seconds.
NOTE: You will use about half the finished pesto in this recipe; the rest is delicious on meat, pasta, salad or on its own as a dip.
1. Add garlic and capsicum to the "Closed lid" and chop on speed 6 for 3 seconds.
2. Use the spatula to scrape down the "Closed lid" and add all the remaining ingredients. Cook on Varoma speed 2 for 20 minutes, replacing the MC with the steamer basket.
3. Blend on speed 7 for 10 seconds. Use your spatula to scrape down the "Closed lid" then blend on speed 7 for an additional 5 seconds until you have a smooth paste.
1. Spread the pizza sauce lengthways down the middle third of the rolled out dough all the way to the ends.
2. Spread the pesto on top of the pizza sauce.
3. Top with diced chorizo, bacon and mushrooms (if you have whole mushrooms, chorizo and bacon rashers, add them to the "Closed lid" and chop on speed 5 for 5 seconds).
4. Cover generously with tasty cheese and mozzarella.
5. Using your spatula, cut the dough into an equal number of diagonal strips on each side of the filling. Fold one strip over the filling, then fold one strip from the opposite side over the first strip. Repeat all the way along to form a plait.
6. Brush with egg wash.
7. Bake at 180 degrees for 30 minutes until golden.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
