Nice, easy muffin recipe. Next time I will probably add more apple or blitz them for less time so the apple is chunkier. Thanks.

    Super easy and yum!
After the comments that the mixture was a bit dense - I used all plain flour plus 3 tsp of baking powder, 1 tsp of bicarb and used buttermilk (homemade - milk + apple cider vinegar). The mixture made 15 muffins and they rose beautifully.

This makes lots of mixture so I made muffins and a loaf, kids enjoyed it in their lunch boxes.  Thank you for posting your recipe

Rubbery... Should have read the comments to replace plain flour with SR...

very easy and delicious. I used some of the comments and adjusted the recipe slightly. I used all SR flour (no baking powder) and ground up some walnuts. Finished with a walnut on top of each of them. They rose very well! Will definitely make again.

Easy and yummy. I added sultanas and currants.

I just took a batch out of the oven and they are delicious. I used all SR flour (1/2 white and 1/2 wholemeal), coconut oil and 100g sugar. They rose beautifully and my daughter who said yuk to the idea has just devoured one. Will definitely make again.

These were awesome, but after reading the comments I did make some alterations to the recipe as given.

I used all SR flour (omitting the baking powder as not required with no plain flour).  Didn't have any raw sugar so used a combination of white and brown sugar (50g of each), reducing the total sugar to 100g.  Also reduced the oil to 50g, doubled the cinnamon and added 100g of sultanas at the end, gently mixing them through with the spatula. They came out light and fluffy (and rose extremely well!), and got two thumbs up from the kids, so I'm pretty happy for my first Thermie baking attempt!  Will definitely make these again!
