Ingredients
Apple,Cinnamon & Date Loaf - GF
- 6 apples, peeled, cored & quartered
- 100 g Butter, or alternative
- 2 eggs
- 100 g Butter Milk, or regular milk with a squirt of lemon juice
- 150 g pitted dates
- 50 g brown sugar
- 250 g GF Flour - Plain
- 2 tsp GF baking powder
- 1 tsp GF bicarb soda
- 2 tsp Vanilla ess
- 1/2 tsp ground cinnamon

Place apples in TM Bowl w/MC 5 sec / Speed 5
Add 20g Butter, brown sugar, vanilla ess & cinnamon in TM Bowl w/MC 4 mins/ 100' / speed 2"Counter-clockwise operation" set aside in another bowl
Place dates in TM Bowl w/MC 5 sec/ speed 6 set aside with apple mix
Place remanding butter in TM Bowl w/MC 10 sec/speed 4
Place 2 eggs in TM Bowl w/MC with butter 10 sec/ Speed4
Add Plain flour, baking powder, bicarb & buttermilk along with set aside apple & date mix Combine in TM Bowl w/MC 20 sec/ speed 5"Counter-clockwise operation"
Pour mixture in prepared Loaf tin Bake on 180' for 50-60 mins
Once cooked leave loaf in tin to cool for 30mins then turn out and serve
Preheat oven to 180' & grease bread tin
Tip
* Can be made into muffins for kids lunch boxes, just shorten the cooking time.
* Can be made with Normal flour if GF is not necessary.
* Leave lid of bread tin off
* Place a small oven proof dish filled with water in the bottom of your oven. This will keep your cakes, muffins & breads from drying out.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This was a fantastic way of using up some apples that were on their last legs. I followed the recipe to the letter but due to the size of the apples I used I ended up adding some extra flour as the mixture seemed a bit wet prior to cooking.
