Ingredients

Cake

  • 2 Granny Smith Apples, peeled and cored
  • 1 juice of lemon
  • 250 grams soy milk
  • 50 grams Canola or Grapeseed Oil
  • 330 grams plain flour
  • 150 grams raw sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Recipe's preparation

    Cake
  1. Preheat oven to 180 degrees.   Lightly oil 9 inch square baking pan & set aside

  2. Chop apple 3 sec/speed 9.  Add lemon juice, soy milk & oil, mix 10 sec/speed 3

  3. Add remainder of ingredients and mix 20 sec/speed 4

  4. Pour batter into pan, bake until brown & toothpick comes out clean, about 45 minutes.  Cool in pan on a wire rack for 20 minutes before Serving.

Tip

If you want to make it pretty you could also bake with sliced apple and sprinkle cinnamon and sugar on the bottom of the pan before pouring the batter in.

    Used 1 extra apple and lined my tin, placing some slices across the base of the tin. Ran out of cinnamon so used mixed spice. Subbed in coconut oil instead of suggested oils. 115g sugar. Mixture was fab. Cake even better. Delicious!!!! Took 50 minutes to cook and I did try and take it out of the tin too soon so next time I'll leave in it for 10 minutes first. Thanks for a delicious recipe!
