Ingredients
base
- 400 grams Mcvities Digestive Buscuits
- 250 grams Butter
filling
- 150 grams dried apricot
- 200 grams white chocolate
- 30 grams sugar
- 2 level teaspoons powered gelatine
- 3 heaped tablespoon water
- 500 grams philli cream cheese
- 150 grams dried cranberries
- 250 gram thickened cream (chilled)

place all biscuits in thermomix bowl and bladeand crush 8 seconds speed 9
tip out into a bowl
melt the butter in TM approx40 seconds on 50 degrees speed 4
combine biscuits with melted butter then press into tin to create a firm base, place in fridge.
filling
place white choc and apricots in TM and chop to small chunks 20 seconds speed 8 remove from TM into a bowl
place butterfly in TM and put in philli cheese and sugar turn on 40 seconds speed 4 to combine .
in a seperate small bowl add the boiling water and the gelatine together, stir until melted ..leave to cool( so tepid when adding to filling mixture )
add the cream, chopped white choc, apricots and cranberries(save a few for the top if required) then blend together 20 seconds speed 4 just to combine then add the gelatine and water stir again for 5 second just to combine.
place this on top of the base and refrigerate for 4 hours.
decorate as you require.

Tip
a round tin is require approx 25 cm but it can be made in any tin you like.

This was very nice but I found the Philly didn't like to mix with the butterfly attachment so took it out and blended it still worked out
