Ingredients

Dough

  • 1 sachet dried instant yeast, or 2 1/4 teaspoons
  • 1 heaped teaspoons sugar raw
  • 60 grams water, or 1/4 cup
  • 80 grams sugar raw, or 1/4 cup
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 80 grams Milk or Milk Substitute, or 1/3 cup
  • 180 grams Butter or Margarine
  • 500 grams Flour, Plain, or 3 packed cups
  • 1/4 tsp salt
  • oil, for spreading
  • 1 egg, for brushing

Chocolate filling

  • 270 grams icing sugar
  • 135 grams cocoa powder
  • 1 level tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 100 gram oil
  • 3 tablespoons water
  • 1 pinches salt

Sweet Crumbs

  • 120 g Flour, Plain
  • 200 g sugar raw
  • 110 g oil
  • 2 tsp vanilla extract
  • 1 pinches saly

Recipe's preparation

    Chocolate filling
  1. Before everything - pre-heat your oven to 350/180 degrees and prepare baking sheets by lining them with baking paper.

    Place all ingrediants other thn the water into the bowlClosed lid"Closed lid" .
    Mix until well combined - speed 3 for30 seconds. Scrape down the sides of the bowl as necessary.
    Add the water one tablespoon at a time to reach a creamy consistency. You may not need all the water.
    The mixture should be able to be spread easily but not ''run" off the dough.
    Set aside.

  3. Add all ingrdiants to the bowl.
    Stir to combine - speed 2 for 30 seconds.
    The mixture should be fairly dry and be able to be crumbled.
    Set aside.
    Clean and dry bowl.
  4. Dough
  5. Add Yeast, the heaped teaspoon of Sugar and Water to the thermomix bowl .

    Stir for 2 minutes at 37 degrees, speed 1.

    Add the rest of the sugar, eggs, vanilla, milk and butter and mix at speed 3 for 30 seconds. Do not worry of the mixture looks "curdled"- it will come together nicely with the addition of the flour.

    Add the flour and the salt and knead for 2 minutes. Kneading can be extended for an extra minute to ensure all ingredients are well combined.

    You can add more flour if the dough appears too sticky. Roughly kneed up to 1/2 cup of flour into the dough before rolling it out (see below)

    The dough is now ready - no need to rise!
  6. Assembly
  7. Divide dough into the number of loaves you wish to make (2 - 4).
    Roll out the first piece of dough on a slightly floured surface. The dough should be rectangular and thin. Spread a light coating of oil on top of the dough and then spread with a generous layer of chocolate filling over the dough, leaving a couple of centimeters bare on all edges.
    Roll the dough up from the shorter side, flattening slightly as you go.
    This will form a flattish log.
    Brush top generously with beaten egg and sprinkle with the topping.
    Place loaf into the fridge (for about 10-15 minutes) to firm slightly prior to baking.
    Repeat process with the rest of the dough.

  9. Place logs onto prepared baking sheets and bake for 25 - 30 minutes (depending on the size of the loaf), or until tops are golden brown.
    Serve warm or at room temperature.

Tip

Delicious with a scoop of vanilla ice cream when served as a dessert.
Equally delicious as an afternnon snack with a cup of tea.
These cakes last well and stay fresh for ages.
Can be made ahead and frozen.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
