Ingredients

Base

  • 40 g blanched almonds
  • 50 g raw sugar
  • 100 g plain flour
  • 100 g Butter, Cubed

Cheesecake

  • 2 Limes, Peeled - Rind reserved from 1
  • 220 g castor sugar
  • 750 g cream cheese, (3 Pkt Philly Cream Cheese)
  • 5 g vanilla essence
  • 4 eggs
  • 150 g cream

Recipe's preparation

    Base
  1. Mill almonds Speed 9/5 sec


  2. Add Sugar,plain flour. Mill Speed 8/ 3 sec


  3. Add butter. Speed 5/20 seconds


  4. Press base into a springform pan (Round or square bottom lined with baking paper). Bake in 150 degree oven for 20 minutes. Allow to cool whilst preparing filling.

  5. Filling
  6. Add rind of 1 lime and 2 limes to TM  - speed 10/15sec. Scrape bowl. Puree again Speed 10/30sec. Scrape bowl.


  7. Add sugar, cream cheese (cubed), vanilla. Mix speed 5/30sec. Scrape bowl


  8. Run TM on speed 5 whilst adding eggs one at a time. Continue TM mixing for 1 minute.


  9. Add cream mix speed 5/30sec.


  10. Poor over base. Bake 220 degree oven for 10 minutes. Decrease oven to 150 degree and cook a further 30 minutes or until set. To prevent cake from cracking cool in the oven with door partly open.


Tip

The base is similar to a Donna Hay cheescake recipe. The filling was based on a MKR recipe from the first season.
