Filling
- 100 g walnuts
- 75 g brown sugar, (or rapadura sugar)
- 1 1/2 tsp cinnamon
- 45 g unsalted butter
Muffins
- 210 g plain flour
- 2 tsp baking powder
- 1/2 tsp bicarb soda
- 75 g caster sugar, (or raw sugar)
- 1 egg
- 45 g unsalted butter
- 250 g buttermilk, (or 175g yoghurt and 75g milk)
Topping
- 125 g honey

Make castor sugar if needed (add raw sugar to clean TM bowl and mill 3 seconds/speed 10).
Add flour, baking powder and bicarb soda to sugar and combine 15 seconds/speed 4. Set dry ingredients aside.
Add butter to TM bowl and melt 3 minutes/60˚C/speed 2.
Add walnuts, sugar and cinnamon. Set dial to lid locked"Closed lid" and press turbo a few times until walnuts are coarsely chopped (or until desired texture is reached). Set filling mixture aside.
Add butter to TM bowl and melt 3 minutes/60˚C/speed 2.
Add combined dry ingredients, egg, butter and buttermilk (or yoghurt and milk) to melted butter. Mix 5 seconds/speed 4. Scrape down sides with spatula and mix a few more seconds until mixture is just combined. Do not over mix.
Melt honey in clean TM bowl or microwave until runny and drizzle over muffins while they are still warm.

Just took these out of the oven. Had to google search for the oven temp though - I cooked them at 200 deg. Can't wait for them to cool down so I can try them!
