Ingredients

  • 150 g buckwheat
  • 2 ripe bananas
  • 50 g Dried Dates
  • 55 g raw almonds
  • 2 eggs
  • 110 g organic Maple Syrup
  • 1 tsp cinnamon
  • 1/2 tsp organic vanilla powder
  • 2 tsp Gluten Free Baking Powder
  • 300 g Frozen Blueberries
  • 120 g extra virgin olive oil
  • 3/4 tsp bicarbonate soda

Recipe's preparation

  1. Preheat oven to 170 degrees Celcius.

    2. Place buckwheat in TM bowl and mill for 1-2 minutes on speed 10.

    3. Add almonds and mill for a further 10-15 seconds on speed 9.

    4. Add dried dates and mix for 15 seconds on speed 9.

    5. Add remaining ingredients.  Set dial to closed lid position and knead for 1 minute on Interval Setting.

    6. Fold in blueberries gently with the spatula.  Pour into a loaf tin and bake for 60 to 75 minutes.  Cover the cake after 45 minutes if it starts to get too brown.

    7. Leave in the tin to cool for 20 minutes before removing and placing on a wire rack to cool. Best served warm.

    I enjoyed these, thanks for sharing the recipe. Very sweet taste for a healthy recipe.  I used a 12 hole muffin tin and only used 200g frozen blueberries as that looked enough to me.  I also sprinkled a tsp of coconut flour withthe berries to absorb excess moisture.

    That's great Lauren.  Using the fresh dates was a good move.  The blueberries are quite wet, which is why the cake takes so long to bake, so the fresh dates would have given the mix more moisture.  Sounds delish...will have to try!

    This was the BEST banana bread I've ever made!! I didn't have any blueberries so left them out but added in 60g of walnuts and used fresh dates instead of dried (not sure if it makes a difference or not!) Just got to keep the kids away from the banana's so they get ripe enough for me to make it again!! Awesome thanks!
