Ingredients
- 200 g ripe bananas, (about 2 medium bananas)
- 150 g Milk
- 100 g bran flakes or Raisin bran, (eg Kellogs all bran wheat flakes)
- 2 egg yolks, (whole egg can also be used)
- 100 g vegetable oil
- 100 g Soft brown sugar
- 120 g Whole Wheat Flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 100 g raisins, (optional)
- 1 pinch salt

- Preheat the oven to 180 degrees celcius (fan forced) and line a large muffin tray with 12 paper cases.
Add the bananas to the TM bowl and mash, 10 seconds, speed 4. Transfer to another bowl and set aside.
Add milk and then bran flakes to TM bowl. Heat 2 minutes, 90 degrees, speed "Gentle stir setting" .
Add the mashed banana and mix 10 seconds, speed 1. This will cool the bowl contents down. If its too hot the egg will partially cook. Remove the bowl from the base and allow to cool for a few minutes if still very hot.
Add egg, oil, sugar and raisons (if using) and mix, 10 seconds, speed 3.5, reverse.
Add flour, baking powder, baking soda, ginger, cinnamon, and salt and mix, 10 seconds speed 3.5, reverse.
Spoon into paper cases and bake 15-18 minutes till cooked.
Tip
I have adapted this from an Annabel Karmel mini muffin recipe. I used to make these as mini muffins but the kids grew bigger. This recipe is a doubling of the origional recipe and makes 12 large muffins. It can be halved easily.
The origional recipe uses egg yolks only but I have used whole egg inplace of egg yolk. The batter is very wet but still comes out very well.
I also make this using frozen bananas. In step 1, mash by doing 2 seconds, speed 8, scrape bowl and repeat. Then warm slightly before transfering to another bowl.
