Ingredients

Black Bean Peppermint Choc Brownie

  • 1 can 400g Black Beans, Drained & Rinsed
  • 2 --- egg, large
  • 1/4 --- Cup cocoa or cacao powder
  • 2/3 --- Cup of honey or maple syrup
  • 1/3 --- Cup Coconut oil
  • 1/2 tsp baking powder, Gluten free
  • 1 pinch salt
  • 2-4 drops Pure peppermint essential oil, Only use 100% pure food grade
  • 3/4 --- Cup Chocolate Chips, Divided

Recipe's preparation

    Method
  1. Pre heat oven to 180°C

    Grease and line an 8x8inch baking dish & set aside.
  2. Put all ingredients except the chocolate chips into the mixing bowl.
    Blend them together 20secs/speed 9/MC on, or until smooth.
  3. Stir in with spatula half a cup of chocolate chips then pour mixture into your baking dish.
  4. Top with remaining 1/4 cup chocolate chips & bake in the oven for 30-35mins or until a toothpick inserted comes out clean.
    Allow to sit for 5mins then transfer to a wire rack to cool slice and serve or you can eat it warm with some Icecream or cream.

Tip

You can use cacao powder and cacao nibs if you prefer it works just as well.

I have also tried it using chia 'eggs' and that also was nice.

You can also change up the flavour from Peppermint to Orange, Cinnamon or even lavender!
