Ingredients
Boiled Fruit Mix
- 230 g Mixed fruit
- 230 g orange juice, or water
- 120 g Butter
- 200 g brown sugar
- 1 tablespoon coffee, instant
- 1 tablespoon Drinking chocolate
- 1 tablespoon golden syrup
- 1 tablespoon marmalade jam
- 1 teaspoon mixed spice
- 1 teaspoon bicarb soda
Cooled Muffin Mix
- 160 g plain four
- 160 g SR flour
- 2 eggs

Place all ingredients in mixing bowl "Counter-clockwise operation" 5 mins, 100 deg, speed 1.
(mix needs to come to the boil and simmer for 1 minute)
Set aside to cool completely.
Place flours and eggs into clean bowl and mix 15 secs, speed 4.
Add cooled fruit mix and set "Counter-clockwise operation" 10 secs, speed 4.
Spoon into muffin cases and bake 180 degrees for 20 minutes. Makes 18-20 muffins.
(can also bake as cake but time will vary obviously)
